Garlic Lemon Chicken with Green Beans & Red Potatoes

Ingredients:

  • 6 tablespoons olive oil
  • 2 lemons (1 thinly sliced, 1 juiced)
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 pound green beans, trimmed
  • 8 small red potatoes, quartered
  • 4 bone-in, skin-on chicken breasts (about 3 1/4 pounds)

Instructions:

  1. Preheat your oven to 400°F. Lightly coat a large baking dish or cast-iron skillet with 1 tablespoon of olive oil. Arrange the thin lemon slices in a single layer at the bottom of the dish.
  2. In a large bowl, whisk together the remaining olive oil, lemon juice, minced garlic, salt, and pepper. Add the green beans and toss until evenly coated. Using tongs or a slotted spoon, transfer the green beans to the baking dish, placing them over the lemon slices.
  3. Add the quartered red potatoes to the same bowl with the olive oil mixture and toss to coat. Arrange the potatoes around the edges of the dish, on top of the green beans.
  4. Finally, place the chicken breasts in the bowl and coat them thoroughly with the remaining olive oil mixture. Position the chicken, skin-side up, in the center of the dish. Pour any leftover oil mixture over the chicken.
  5. Roast in the preheated oven for 50 minutes. Remove the chicken from the dish and return the green beans and potatoes to the oven for an additional 10 minutes, or until the potatoes are tender.
  6. Serve warm by dividing the green beans and potatoes equally among plates, accompanied by a chicken breast.
