A classic and delightful dish, Scalloped Potatoes are perfect for special occasions like Easter,Thanksgiving, or just a Sunday dinner. This version, akin to potatoes au gratin, has been tried and tested by many and stands out as a favorite.

Ingredients:

4 cups thinly sliced potatoes
3 tablespoons butter
3 tablespoons flour
1 1⁄2 cups milk
1 teaspoon salt
A dash of cayenne pepper
1 cup grated sharp cheddar cheese
1⁄2 cup grated cheese (for topping)
Paprika (for color)

Instructions:

1.Prepare the Cheese Sauce:

In a saucepan, melt the butter and blend in the flour. Let it sit for a minute.
Gradually add cold milk, whisking continuously.
Season with salt and cayenne pepper.
On low heat, cook the sauce until it’s smooth and boiling. Occasionally whisk.
Reduce the heat and mix in the cheddar cheese until melted.

2.Layer the Potatoes:

In a greased one-quart casserole dish, layer half of the sliced potatoes.
Pour half of the cheese sauce over the potatoes.
Repeat with the remaining potatoes and cheese sauce.

3.Final Touches:

Sprinkle the additional 1⁄2 cup of cheese on top.
Add a dash of paprika for a pop of color.

4.Bake:

Bake the dish uncovered in a preheated oven at 350°F for about 1 hour or until the potatoes are tender and the top is golden brown.

Serve hot and enjoy this creamy, cheesy delight!
